Savoury Thai Basil Mince (Pad Kra Pao)

The king of Thai street food—salty, spicy, and incredibly addictive.

Fab Asian Bundle: Suree Fish Sauce, Pearl River Bridge Light Soy Sauce, Lee Kum Kee Chilli Garlic Sauce.

Ingredients

  • 400g Ground chicken or pork.

  • A large handful of fresh Holy Basil (or regular Basil).

  • 1 Egg (for frying).

Step-by-Step

  1. The Sizzle: Heat oil in a wok. Add 1 tbsp Lee Kum Kee Chilli Garlic Sauce. Fry until fragrant (be careful not to burn the garlic!).

  2. The Meat: Add the mince to the wok. Break it apart with a spatula and fry until browned.

  3. The Seasoning: This is the most important part. Add 1 tbsp Suree Fish Sauce and 1 tbsp Pearl River Bridge Light Soy Sauce. This provides the "soul" of the dish.

  4. The Basil: Turn off the heat and throw in the basil leaves. Toss until they just wilt from the residual heat.

  5. The Topping: In a separate pan, fry an egg in plenty of oil until the edges are crispy but the yolk is still runny. Serve the mince over rice with the egg on top.
